Saint Jean d’Aumières the 4 seasons
Before the flowers bloom we already see small grape clusters emerge. Each bud gives a flower and each flower, a grape.
The grains are formed, they will grow to get in touch with each other and so ‘close cluster’. It is then that they will take their final color and ripen gorging sugar.
The cluster is finally closed and the grapes take their final color. This color change occurs about 60 days before harvest, which gives us already now a good indication of the earliness of the vintage or if it looks late.
